
This is the tea service: brewing pot, filter, pouring pot, cups, small tongs, kettle and drained tea tray. Because the pot and cups are so small a considerable amount of time is given over to the mechanics of brewing, pouring and serving the tea. This creates a rhythm that keeps things ticking over. What’s more, each tea changes in its own way as you refresh it with more water. The flavour is said to peak on a certain pouring, for example, on the 4th, remain good till the 7th, then decline and by the 10th the leaves should be replaced.
